Cajun Buffalo Chicken with Crispy Green Beans

Ingredients
  

Ingredients:

  • 1 lb. boneless chicken breast or thighs
  • ½ lb. fresh green beans washed and trimmed
  • 2 Tbsp. olive oil
  • 2 tsp. Cajun seasoning
  • ½ tsp. Salt
  • ¼ cup feta crumbled (Blue cheese crumbles are great too!)
  • ¼ cup Frank’s Red Hot Sauce
  • ¼ cup ranch dressing I use a Greek yogurt based dressing

Instructions
 

Instructions:

  • Preheat oven to 400°F. Lightly grease a 9x13 casserole dish.
  • Spread the green beans across the middle of the casserole dish. Arrange half of the chicken on the left and half on the right of the beans.
  • Drizzle olive oil over the chicken and green beans. Season the chicken and green beans with the Cajun seasoning and salt.
  • Bake uncovered in the oven for 30-35 minutes until chicken reaches an internal temperature of 165°F and the green beans are tender crisp.
  • Drizzle Frank’s Red Hot Sauce over the chicken. Sprinkle feta cheese over the chicken and green beans. Finish with a drizzle of ranch dressing.
