Easy 30-Minute Polish Stew

Ingredients:
2
cloves
garlic
minced
1
medium green squash
halved lengthwise and sliced in 1/2” slices
1
medium yellow squash
halved lengthwise and sliced in 1/2 “ slices
1
medium onion
diced
1
red or orange bell pepper
diced
1
lb.
turkey kielbasa
sliced in ¼” slices

14 oz. cans of stewed tomatoes
1
cup
tomato sauce
3-4
Tbsp.
tomato paste
optional
Salt and pepper to taste

Tbsp.
Italian seasoning
Pinch
of ground cayenne pepper
Instructions
Wash and chop all of your vegetables.
Slice the kielbasa into ¼” thick slices.
Add 1 Tbsp. olive oil to a large, non-stick pan set on medium heat.
Sauté the onion, garlic and squash for 3-5 minutes, until they start to soften.
Add in the kielbasa and cook for another 5 minutes.
Add stewed tomatoes and sauce.
Season with salt, pepper, Italian seasoning, and crushed red pepper.
Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes.
Notes
Serve over rice or quinoa.
You can also sprinkle it with Parmesan cheese.
Polish stew reheats very well and tastes even better the next day!
