Peel and very thinly slice one red onion. A mandoline works great to give you very thin, even slices.
Pack the onion slices into a pint Mason jar.
In a small saucepan, heat the apple cider vinegar, lemon juice, honey, salt, and oregano until steaming. Carefully pour over the onion slices to cover.
Screw the lid on and let cool to room temperature. At this point, the onions will have turned a beautiful pink and can be used within 1-2 hours. But for best flavor, refrigerate the sealed jar overnight before using. They will keep in the refrigerator 2-3 weeks.
Notes
If you like spicy - you can add a ½ tsp. of red pepper flakes OR 2 thinly sliced habanero peppers. Yum!
