Pickled Red Onions

  • 1 medium red onion approximately 2 cups thinly sliced
  • ¾ cups apple cider vinegar
  • 3 Tbsp. fresh lemon juice juice of half a lemon
  • 1 tsp. honey
  • 1 tsp. sea salt
  • ½ tsp. oregano

Instructions:

  • Peel and very thinly slice one red onion. A mandoline works great to give you very thin, even slices.
  • Pack the onion slices into a pint Mason jar.
  • In a small saucepan, heat the apple cider vinegar, lemon juice, honey, salt, and oregano until steaming. Carefully pour over the onion slices to cover.
  • Screw the lid on and let cool to room temperature. At this point, the onions will have turned a beautiful pink and can be used within 1-2 hours. But for best flavor, refrigerate the sealed jar overnight before using. They will keep in the refrigerator 2-3 weeks.

Notes

If you like spicy - you can add a ½ tsp. of red pepper flakes OR 2 thinly sliced habanero peppers. Yum!
