Welcome to Buddha Belly Bistro! I’m excited to see you here! My name is Belinda and I’m a self-taught cook from Pennsylvania.

I have been on a food journey for the past several years. It started with my desire to learn more about my heritage (Korean, English, Penny Dutch) and has evolved to include nutrition, healthy family cooking, and learning about foods that decrease inflammation.

As my recipe repertoire has grown, family and friends have asked me to make a food blog to share with others what I have learned.

One of my favorite things about food is that it brings people together! I love learning the history and tradition of recipes and then updating them to bring in healthy swaps and bright fresh flavors.

Cooking should be fun and recipes flexible. I feel it is important to eat whole foods and minimize the amount of processed foods we consume. But I still love my baked goods!

    I made the Thai Summer Rolls today. I added shrimp. They were delicious. Very easy to do.
