Easy Asian Cucumber Salad

This is my absolute FAVORITE cucumber salad! It’s quick, it’s easy, and SOOO GOOD!!! Whenever I make this for family and friends, it gets rave reviews. 

Try this addictive salad today! It has the perfect amount of umami. Goes great with any Asian dishes and is an awesome side dish for tailgating, picnics, and parties.

Tips for making Easy Asian Cucumber Salad

  • Use a mandoline or very sharp knife to slice your cucumbers. You want them super thin.
  • Use good quality rice wine vinegar. Most rice wine vinegars are seasoned. If you get unseasoned, you may need to add 1 teaspoon of salt. 
  • Make sure to use toasted sesame seeds! They add a toasty, nutty flavor that you will love!
  • For best flavor, let sit at room temperature for an hour before serving. This will give the dressing time to combine with the cucumbers. Toss before serving.

Ingredients
  

Ingredients:

  • 4 cups very thinly sliced seedless cucumber English cucumber or mini cucumbers
  • 2-3 scallions thinly sliced
  • ¼ cup rice wine vinegar
  • 1 tsp. honey
  • ½ tsp. toasted sesame oil
  • 1 tsp. sesame seeds I prefer black sesame seeds for this dish
  • ¼ tsp. red pepper flakes

Instructions
 

Instructions:

  • Add thinly sliced cucumbers and scallions to the bowl.
  • In a small bowl, whisk together rice wine vinegar, honey, sesame oil, sesame seeds and red pepper flakes.
  • Add dressing to cucumbers and toss to mix.
  • Allow to sit for 10 minutes before serving to allow flavors to blend. Serve with your favorite meal!

Notes

Can be refrigerated for up to 3 days. After that, the cucumbers will lose their crunchiness.
