Does it matter what kind of vegetables I use?
Feel free to substitute or add in various vegetables. Today, I had a small wedge of green cabbage, so I added it in. Peas, green beans, kale, or corn may be good options too. Keep in mind that cooking times may vary.
Can I substitute something else for the kielbasa?
Turkey kielbasa, smoked sausage, and low fat or low sodium kielbasa are all good options! I also try to make sure the kielbasa is nitrate free. For a vegetarian version, simply omit the kielbasa.
How to Make Easy 30-Minute Polish Stew
- Prep the ingredients: Wash and chop all of your vegetables. Slice the kielbasa into ¼” thick slices.
- Heating the ingredients: Add 1 Tbsp. olive oil to a large, non-stick pan set on medium heat. Sauté the onion, garlic, pepper, and squash for 3-5 minutes, until they start to soften. Add in the kielbasa and cook for another 5 minutes. Add stewed tomatoes and sauce. Season with salt, pepper, Italian seasoning, and red pepper. Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes.
Serving suggestions: Serve over rice or quinoa. You can also sprinkle it with Parmesan cheese. Polish stew reheats very well and tastes even better the next day!

- 2 cloves garlic minced
- 1 medium green squash halved lengthwise and sliced in 1/2” slices
- 1 medium yellow squash halved lengthwise and sliced in 1/2 “ slices
- 1 medium onion diced
- 1 red or orange bell pepper diced
- 1 lb. turkey kielbasa sliced in ¼” slices
- 2 14 oz. cans of stewed tomatoes
- 1 cup tomato sauce
- 3-4 Tbsp. tomato paste optional
- Salt and pepper to taste
- 1 Tbsp. Italian seasoning
- Pinch of ground cayenne pepper
