Pickled onions are one of my favorite condiments. We always have a jar in the refrigerator. Pickling makes them crunchy, tangy, and addictive!
Use them to top your burgers, tacos, and salads – sooo irresistible! Quick, super easy, and delicious! With only 6 ingredients, you can prepare these in 15 minutes, throw them in the refrigerator, and enjoy them for days. That’s the best kind of meal prep!
Quick Tips:
Use a mandoline to ensure thin, even slices. If you want to make this vegetarian, swap out the honey with maple syrup or agave syrup.
Spice it up! Add two thinly sliced habenaros.
Pickled Red Onions
Crisp, tangy pickled onions will become your favorite condiment! Perfect topping for burgers, tacos, and salads!

- 1 medium red onion approximately 2 cups thinly sliced
- ¾ cups apple cider vinegar
- 3 Tbsp. fresh lemon juice juice of half a lemon
- 1 tsp. honey
- 1 tsp. sea salt
- ½ tsp. oregano

- Peel and very thinly slice one red onion. A mandoline works great to give you very thin, even slices.
- Pack the onion slices into a pint Mason jar.
- In a small saucepan, heat the apple cider vinegar, lemon juice, honey, salt, and oregano until steaming. Carefully pour over the onion slices to cover.
- Screw the lid on and let cool to room temperature. At this point, the onions will have turned a beautiful pink and can be used within 1-2 hours. But for best flavor, refrigerate the sealed jar overnight before using. They will keep in the refrigerator 2-3 weeks.
Notes
If you like spicy – you can add a ½ tsp. of red pepper flakes OR 2 thinly sliced habanero peppers. Yum!
