July is here and that means juicy, ripe, garden tomatoes are starting to become available. Our family loves to eat them right off the vine, on sandwiches, and one of our favorites is in this burrata salad! The creamy burrata blends with the tanginess of fresh tomatoes, bright basil, and the zing of the balsamic glaze. It’s a quick, easy side dish to make or is perfect for a light lunch with a crusty baguette!
Summer Burrata Salad
Nothing screams summer more than a burrata salad with fresh garden tomatoes. This is a quick, impressive salad to make for friends and family. Or, serve for lunch with some fresh, crusty bread!
Ingredients

- 2-3 to tomatoes sliced
- Handful of cherry tomatoes halved
- 8 oz. burrata
- ⅓ cup fresh basil torn
- Balsamic glaze
- Sea salt
- Fresh cracked black pepper

Instructions:
- Arrange tomato slices and halved cherry tomatoes on a medium platter. Break the burrata into bite-sized pieces and arrange over the tomatoes. Sprinkle with sea salt and fresh pepper. Drizzle with balsamic glaze and sprinkle fresh basil on top. Serve immediately.
Notes
Choose tomatoes of various colors and shapes to add visual interest to your platter. I like to use fig balsamic to elevate the flavor even more!
